What Makes Miller’s Amish Maple Syrup So Special?

For generations the art and craft of making maple syrup has been passed down to the team at Miller’s Sugar Camp. We strive to produce the highest quality, best tasting and mouth feeling Ohio maple syrup available. It starts with carefully picking and tapping select maple trees that are of a certain age and size which we feel will produce the sweetest sap. The maple trees we tap are located on the Circle L Farm in Burbank, Ohio, and we feel these Ohio maple trees produce some of the best sap that makes a smooth, sweet buttery tasting syrup.

We have found that Ohio maple trees are generally healthier and have a longer growing season than maple trees in other parts of the country which allows them to withstand the tapping process better. We harvest our sap in late Winter, generally February to early March. Once the maple trees start budding, we feel the quality of sap is not up to our standards and we cease harvesting.

At Miller’s Sugar Camp we are a smaller, boutique maple syrup producer which allows us to take a thoughtful and careful approach to our syrup making production. We have approximately 4,000 taps in our trees and target producing 2,000 gallons of finished maple syrup per season. Larger syrup producers who are doing tremendous volumes incorporate a process called “flash boiling” which doesn’t spend as much time in the evaporator, and we feel doesn’t produce the best taste. Additionally, our evaporator is wood fired which doesn’t get as hot as the flash boiling process. Other syrup producers use natural gas or other fuels to fire their evaporators, and we feel the wood imparts a delicate flavor to our maple syrup.

We also take great care in keeping the evaporator clean after 200 gallons of syrup making, to ensure the process is always producing the best quality. If you don’t clean the evaporator often enough, the syrup can become dark and loses its great flavor.
